Vic's Lemon Biscuits Recipe

Participants of Rotoroa's volunteer days are usually in for a culinary as well as an environmental treat - home baking prepared by Rotoroa staff.

Our last day in June was enthusiastically attended by around 40 volunteers - one of whom put in a plea for Vic's lemon biscuit recipe, so here it is:

250g butter
1 egg
1/2 cup sugar
3 cups plain flour
2 - 3 teaspoons grated lemon rind

These are a lovely shortbread-sytle biscuit which are not too sweet. If you like a stronger lemon flavour, add more lemon zest.

Cream the butter and sugar; add the egg, lemon rind and beat well. Sift flour into creamed mixture.

Turn out onto a lightly floured board and knead lightly. Roll dough out to about 5mm thickness; cut out rounds using a 5cm scone or biscuit cutter.

Place on a greased oven tray, bake at 190°C for 12-15 minutes or until pale golden. Dust with icing sugar. Yum!
