Comfort food from the archives

Some of you may have enjoyed weiner schnitzel in the 1980s; if you've forgotten all about it, or if you've never tried it, here's a very quick and simple recipe to enjoy. Popular with little people too!

  • beef schniztel, cut into serving sized pieces, any fat and sinew removed
  • flour and a pinch of salt
  • 1 egg plus a little milk, beaten together
  • breadcrumbs

Trim your schnitzel pieces and beat lightly with a meat hammer (if you don't have a meat hammer, use the edge of a bluntish heavy blade to cross-hatch the meat on both sides to help tenderise the meat). Dust schnitzel with flour, then immerse in the egg mixture and coat with breadcrumbs.

Quickly shallow fry pieces until golden brown, turning only once.

For a real retro twist, stuff schnitzel pieces with cheese and ham, securing together with toothpicks before crumbing.
